Since opening in November 2023, Copper & Sage has immediately gained devoted regulars thanks to its approachable but creative menu of Southern-inspired dishes. Located on Camelback Road at 3rd Street, the team at Westside Concepts fully remodeled this building which housed a popular local brewery for many years. The exposed brick and wood beam ceiling now add background to dark leather banquettes, chandelier lighting, and copper accents. Director of Culinary, Chef Evon Profitt, has had the idea for the Copper & Sage menu for years. With family from Louisiana and living on an actual farm in Wittmann, Arizona, putting together a farm-to-table menu with a Southern flair was inevitable. Sure, there’s fried green tomatoes and deviled eggs, but the latter gets a bourbon twist and is served with bacon jam, pecan, and chive. Meanwhile, the green tomatoes are topped with a cracked pepper chèvre, balsamic reduction, and basil. Instead of chicken and waffles, Chef Profitt opts for hot chicken served on Texas toast alongside bourbon peach and pecan-glazed beignets. Or try the cast iron duck breast with pork belly collard greens and hot honey. For lighter fare, try the grilled Scottish salmon, served with trumpet and maitake mushrooms, roasted cauliflower, shallots, and a tart cherry vinaigrette. There’s also brunch on the weekends, featuring a cast iron cinnamon roll, biscuits and gravy, and popular cast iron hash with steak, eggs, and potatoes. The cocktail menu presents elevated classics but over in Blue Stave, a speakeasy connected by the Copper & Sage patio, drinks are the star of the show. With Prohibition era-inspired cocktails and small bites, this intimate lounge also features a private room hidden behind a bookcase.
