Razor clams offer a sharp contrast: tender, smoky, and herbaceous, topped with salsa verde and a touch of spice from the housemade ‘nduja. The pastas are where Pasta truly shines. The agnolotti, al dente parcels filled with an umami-laden mushroom sauce, are served in a butter emulsion under a snowfall of 36-month-aged Parmigiano Reggiano. Then there’s the taglierini with black truffle, a dish that captures the essence of truffle without overdoing it. The thin strands are cooked for just two minutes and coated in a glossy, intensely flavored sauce that lingers long after the last bite. For dessert, Buraschi’s cheesecake, which blends mascarpone and gorgonzola, hits the right balance of creamy sweetness with a hint of tang. But the torta di pistachio is the true showstopper. Made with Sicilian pistachios, its earthy richness is amplified by a chewy pâte sucrée base and a dollop of unsweetened mascarpone cream. Pasta is already packed nightly, and it’s easy to see why. Father-and-son duo Jesús and Manuel Brazon of Caracas Bakery craft some of Miami’s most sought-after baked goods, and if you haven’t heard of their bakery before, just wait until you get a taste in the Gables. On Monday, November 25, Gables resi- dents began texting New Times about an early Christmas miracle — Caracas Bakery seemed to have appeared overnight along Miracle Mile. Edible South Florida even posted a photo of the storefront with the caption, “What’s this on Miracle Mile in Coral Gables? They hope to open soon!” A photo series shared by Jesús Brazon on his personal Insta- gram account a few days prior seems to have confirmed the news. He writes, “Somewhere” test- ing the P17…” with a series of photos containing a hint at the new location (near Miracle The- atre) and behind-the-scenes photos of an early photo shoot at the soon-to-open bakery. Therefore, get ready for a December or January opening, Gables! The menu, which has grown considerably with the opening of its Upper Eastside loca- tion (it originally opened in Doral), features a variety of bread, pastries, and a list of break- fast- and lunch-inspired sandwiches or small toasts served on fresh-baked baguettes with chewy slices of campesino. But it’s the bakery’s pastry program that showcases the Venezuelan spin. While the usual suspects like the guava and cheese Dan- ish, apple turnovers labeled as pastel de man- zana, and Nutella or pastry-stuffed cruffins are stellar, don’t miss its take on the sweet, Latin American-style sticky buns known as golfeados, often accented with tropical fruits, raw sugar, or cheese.
