Brace for modern (at times loud-ish) music and a rooftop patio that offers panoramic views stretching from Camelback Mountain to the Phoenix skyline, framed by palm trees and Technicolor sunsets. Bar 1912 cannot be bothered with hide-and-seek. It’s simply a bar, accessible via the back of a restaurant, that requires minimal knowledge and effort — the rare no-frills speakeasy. Gather ’round the fireplace or perch at the bar to watch skilled cocktailians mix and match tinctures to create ornate tipples. Much like Valentine, the restaurant it buttresses, Bar 1912 revels in Arizona ingredients and lore. You won’t be arrested if you’re caught drinking there, since Prohi- bition got repealed in 1933. At least you have to be in the know to find it: Either someone leads you behind a curtain inside down- town steakhouse Cleaverman, or you slip through an unassuming side door. Feels like a speakeasy to us. Inside, you encounter an intimate, swanky room where potent liba- tions and hushed conversations rule the evening. Instead of Cleaverman’s full menu, you get a curated lineup of small plates (the beef tartare with pickled mushroom, truffle, egg yolk and crispy leek is a standout) and elegant cocktails. After countless visits, we still feel a sense of excitement as we arrive, ready to trade sun and heat for the dark, cool nautically themed space. We still get a kick out of the concept — that you’re drinking in the cargo hold of a 19th-century ship as it sails the tropics, complete with portholes and thunder effects. And the drinks still slap hard, finding the sweet spot in the middle of creative, tasty and strong. The Phoenix loca- tion is still delightfully adults-only; for a slightly different experience, drop your anchor at the Gilbert port, where kids are welcome until 6 p.m.
